Protective IELs are a network of cells that exist beneath the layer of epithelial cells that covers inner and outer body surfaces; they act as primary line of defense against infection and are vital to the process of wound-repair.
Marc Veldhoen, of The Babraham Institute in Cambridge, and his team discovered that the number of IELs depends on levels of aryl hydrocarbon receptor (AhR), which is a cell-surface protein. AhRs may be controlled by certain dietary components, which are usually found in cruciferous (green) vegetables.
Studies show that mice that lack this receptor were unable to maintain control of the number and composition of the microbes living on the intestinal surface.
