Cell, which is a Cell Press publication, researchers announced their discovery that eating green vegetables improves immune system function.

Marc Veldhoen, of The Babraham Institute in Cambridge, and his team discovered that the number of IELs depends on levels of aryl hydrocarbon receptor (AhR), which is a cell-surface protein. AhRs may be controlled by certain dietary components, which are usually found in cruciferous (green) vegetables.
Studies show that mice that lack this receptor were unable to maintain control of the number and composition of the microbes living on the intestinal surface. Earlier research indicates that the breakdown of green vegetables releases a compound that can be converted into a molecule that triggers the AhRs. The new study shows that mice that are fed a synthetic diet that lacks the compound, exhibit lower AhR activity and a reduction in IELs.
Although mice and humans obviously have key genetic and structural differences, they share enough similarities to indicate that maintaining a diet rich in green vegetables can definitely boost people's immunity.
